Super Healthy Apple Pie Breakfast Recipe

Healthy Crust-Free Apple Pie Breakfast Recipe

Ingredients:

  • 4 apples (granny smith or other tart apple works best)
  • 4 teaspoons of extra virgin olive oil
  • 1 teaspoon of ground cinnamon
  • ¼ teaspoon of nutmeg
  • 1/8 teaspoon of cloves
  • ½ teaspoon of salt
  • 2 tablespoons of pure maple syrup
  • ½ cup of chopped walnuts

Directions:

Start up the oven and set the broiler at medium to high heat. The rack should be positioned about 5 or 6 inches from the broiler.

Cut the apples in half, and cut out the core and seeds. Use your fingers or a cooking brush to rub the apples with olive oil (skin and open sides). Place them down on a baking sheet lined with parchment paper and broil until skins start to blister and apples start to soften (you can test this with a fork). This usually takes 4-6 minutes, depending on your oven.

In a bowl, combine all spices and salt until incorporated. Turn the apples over on the baking sheet, skin side down, and sprinkle with the mixture of spices. Then use a small spoon to drizzle the apples with maple syrup. Put them back in the oven to broil for another 2 minutes, skin side down. Remove from oven, sprinkle with walnut pieces, and broil for another 1 minute.

Remove them from the oven, allow them to cool for 5 minutes, and enjoy! They’re even great cold, if you want to save the rest, or heat them up in the microwave.
