For all of these recipes, you’re going to leave the skin on the zucchini to maximize the nutritional benefits.

In all cases, combine your wet and dry ingredients separately first, then mix before placing in a 9 x 4 inch loaf or bread pan.

Low Fat Zucchini Bread

Ingredients:

  • 2 cups of whole wheat flour
  • 1/2 cup of brown sugar
  • 1 teaspoon of baking soda
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of salt
  • 1 large egg
  • 2 tablespoon of melted butter
  • 1 cup of apple sauce
  • 1 and 1/2 cups of shredded zucchini

Directions: Combine wet and dry ingredients separately and fold together. Pour into a 9 x 4 inch greased loaf pan and bake at 325 degrees (F) for 45-55 minutes. Allow to cool before serving.

Chocolate Zucchini Bread (Gluten Free)

Ingredients:

  • 1½ cups of almond flour
  • 1½ teaspoons of baking soda
  • ¼ cup of cacao powder
  • 2 teaspoons of ground cinnamon
  • ¼ teaspoon of salt
  • 1 cup of zucchini, finely grated
  • 1 large egg
  • ½ cup coconut oil
  • 1 teaspoon of vanilla extract
  • 3 tablespoon of raw honey
  • ½ cup of dark chocolate chips

Directions: Combine wet and dry ingredients separately and fold together. Pour into a 9 x 4 inch greased loaf pan and bake at 350 degrees (F) for 35-40 minutes. Allow to cool before serving.

Zucchini Walnut Bread

Ingredients:

  • 3 eggs (beaten)
  • 2 cups of organic cane sugar
  • 2 cups of zucchini, finely grated
  • 3 teaspoons of vanilla extract
  • 1/2 cup of canola oil
  • 3 cups of whole wheat flour
  • 3 teaspoons of cinnamon
  • 1 teaspoon of salt
  • 1 teaspoon of baking soda
  • 3/4 cups of walnut pieces

Directions: Combine wet and dry ingredients separately and fold together. Pour into a 9 x 4 inch greased loaf pan and bake at 325 degrees (F) for 45-50 minutes. Allow to cool before serving.

Chocolate Chip Coconut Zucchini Bread

Ingredients:

  • 3 cups of whole wheat flour
  • 1/2 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 teaspoon of cinnamon
  • 3 eggs
  • 1/2 cup organic cane sugar
  • 1/2 cup raw honey
  • 1/2 cup of coconut oil, melted
  • 2 teaspoons vanilla extract
  • 2 cups of zucchini (finely grated)
  • 1/2 cup of unsweetened shredded coconut
  • 1 cup dark chocolate chips (or chunks)

Directions: Combine wet and dry ingredients separately and fold together. Pour into a 9 x 4 inch greased loaf pan and bake at 350 degrees (F) for 45-50 minutes. Allow to cool before serving.

Pumpkin Zucchini Bread Squares

Ingredients:

  • 3 eggs (beaten)
  • 1 cup of brown sugar
  • 1 cup of organic cane sugar
  • 2 cups of zucchini (finely grated)
  • 15 ounces (1 can) of pureed pumpkin
  • 3 cups of whole wheat flour
  • 3 teaspoons of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1 teaspoon of salt
  • 1/4 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 3/4 cup of walnut pieces
  • 2 tablespoons of ground flax seeds

Directions: Combine wet and dry ingredients separately and fold together. Pour into a 9 x 4 inch greased loaf pan and bake at 325 degrees (F) for 45-50 minutes. Allow to cool before serving.
